What is the excessive importance of filoques, creeds and homilies in Roman Catholicism for?

I haven't had much exposure to Catholicism but I used to work for a Greek Orthodox school. In the Greek Orthodox Church, Homilies, etc are quotes from saints which are wise and useful in guiding us in our spiritual life.
